Summer Evenings: Chilled Asparagus Soup from Mom

My mom is the the master of the "take whatever is in the fridge and make a fantastic meal". Her creations are always creative, unique, and of course delicious. She sent me this recipe last week for a flavorful summer soup that can be served hot or cold, depending on your mood. Enjoy!

Last night I made asparagus soup.  It was delicious hot and very refreshing as a chilled soup garnished with a ring of sweet red pepper, a dollop of sour cream and garnished with lemon zest!



Ingredients
6 cups of water
1 dozen asparagus stalks
1 large garlic clove, chopped
1/2 cup chopped sweet onion
2 tsp of chicken flavored "Better than Bouillon" soup base (Or, substitute chicken broth for the water if you don't have this)
Salt and pepper to taste

Cut asparagus in 1-1/2 inch pieces. Chop onion and garlic
Put water Into a 4 quart pot
Add all ingredients
Cook on a medium heat setting for an hour until asparagus is tender.

At this point the soup can be served hot. It will have the asparagus pieces.

To prepare for a chilled soup, reserve some of the cooked asparagus tips to use for a garnish. Use a hand blender to puree the warm soup.  Chill soup for several hours or overnight.

For garnish
Sweet red bell pepper
1 lemon
Sour cream
Asparagus tips 

To serve, ladle soup into a bowl. Top with red pepper sliced in rings or chopped pieces, a teaspoon/ dollop of sour cream. Add lemon zest and a squeeze of lemon juice onto the soup. 


The chilled soup could also benefit from some chopped fresh basil as a garnish. 

Served hot you could add baked croutons  and top with shredded carrots for a colorful garnish.

Terrier for Life: Making Lasting Connections (And Please fill out a brief survey!)

Back when I was deciding where to go to college, I sent away an application to Boston University (along with about seven other schools). I wanted to go somewhere where I didn't know everyone and where I could have a new experience. When it came time to pick a place, I figured why not try something new? So I packed up a car full of stuff and headed east from my suburban St. Louis home and landed in the heart of  Boston. I couldn't have imagined that 10 years after arriving on campus that I'd be back to BU as an employee. On my first day of work I ran into my first professor in the elevator and almost had a panic attack that I forgot my homework! Almost four years later I'm approaching my 10 year reunion and still heading into the School of Management everyday for work. I had a great experience as a student and am glad that I can continue my connection to BU. Coincidentally, this weekend is Alumni Reunion Weekend. While I'll be working for part of the weekend, I'll also put on my favorite scarlet & white BU shirt to cheer on the men's ice hockey team from our season ticket seats!

About a month ago I got an email from Lily Keung, a BU student in the School of Management, asking for help with a school project. In the junior year at the School of Management, students work in teams to develop a new product and build a business plan from scratch. I gladly agreed to take part in a focus group - not only was it a BU project, but it also had to do with a cooking product! After the focus group, Lily asked if I could help her team gather some feedback on their product. I hope that you'll take a few minutes to read below and fill out her team's survey. Marc's Take: State Fair Food Guide

This week’s guest post is the writing debut of my brother Marc. While he has made cameos on the blog over the past three years, this marks his first official article! My brother is a fantastic cook, expert meat and fish smoker, and all around great guy. He shares the family love for food adventures and this post covers one of his annual traditions. With the Big E running in Massachusetts, I asked him to share his guide to state fair eating. If you follow his guide, you'll be sure to have a great time. State Fair Food Guide

The end of summer brings one of America’s great traditions, the State fairs. The Big E began this past weekend in Springfield. In Indiana our state fair takes place in August, so below are some highlights to help you guide your way through the Big E over the next few weeks.

State fairs began as a way to celebrate and promote local agriculture and products available in each state. They were a way for local farmers to showcase the crops and animals they raise. They were also way to educate each other on the best practices in farming. State Fairs continue to serve this function today, although it is more of an education for those of us that are not part of the agricultural industry on a daily basis. As you visit the fair be sure to take a walk through the animal barns and vegetable displays to see this first hand.

Now let’s talk about what makes the state fair great, the food and in particular the deep fried foods. The Indiana fair offers a great way to enjoy the fair and try many different foods, Two Dollar Tuesday. Each Tuesday of the fair vendors offer a different item for $2, usually it is a smaller portion of their signature dish. This not only allows you to save money but also try significantly more items. I recommend checking the specials at your state fair for an opportunity like this.

For the past few years a group of friends and I have made the trip to the fair. Luckily the fair grounds are in Indianapolis just a 10 minute drive. Even if you are further away the state fair is a good day trip and is worth experiencing. Here are some highlights from our trips to the fair:

Appetizers- Always start with something sweet, that’s why you came to the fair to begin with right?

Deep Fried Butter- This is by far one of the best deep fried treats, imagine a frozen pat of butter coated in cinnamon and sugar dipped in funnel cake batter and deep fried. The resulting golf ball sized treat tastes like a gooey cinnamon roll. The best way to eat it is to bite off one end take the liquid center as if it were a shot and chase it with the fried dough. 5 out of 5.



Deep Fried Reese’s Peanut Butter Cup - Right up there with the deep fried butter. People rave about the Snickers Bar and the Twinkie. But the Reese's cup surpasses both. The full size Reese’s cup dipped is dipped in a funnel cake batter and fried until the outside is crisp. The inside of the dough is soft and the peanut butter and chocolate melt together to create an unforgettable combination. 5 out of 5.



Deep Fried Cookie Dough - This was actually found at Progressive field in Cleveland, home of the Cleveland Indians. We all love raw Chocolate Chip cookie dough and this hits the mark. A generous portion of raw cookie dough is covered in funnel cake batter, fried and served with powdered sugar. The cookie dough come out warm and tastes like a partially baked cookie. If you are at the ball park this is a must have. 5 out of 5.



Entrees- Time for something a bit heartier
Chicken Eggo Sandwich- A deep fried chicken breast coated in a Captain Crunch Batter between two eggo waffles. This was worth the hype and had a nice crunch on both the eggos and the chicken. I would recommend giving this a try if available at your fair. 4 out of 5

Donut or French Toast Cheeseburger- As it sounds a burger with maple syrup between two pieces of French toast or two krispy crème donuts (your choice). This has become more popular in recent years and really isn’t all that it’s cracked up to be. The sweetness of the donuts overpowers the burger and doesn’t offer the right balance of sweet and savory. 2 out of 5

Dessert-

Ya Ya’s Deep Fried Tomato Balls - Greek inspired combination of diced tomatoes, cheese onions and bread crumbs fried to a crisp golden brown. These come served with a tzaziki sauce that makes it extremely refreshing after all the sweet items you had before. 4 out of 5.



Corn on the Cob - I know what you are thinking. Corn on the Cob that is too healthy for the fair, why waste your time? Well remember the fair is about celebrating the harvest and the local farmers. Oh and they have crock pots full of melting butter that your corn takes a bath in before it gets to you. Throw that health concern out the window, nothing healthy about it. 5 out of 5

Beth From Denver: Zucchini Crisps for Healthy Snack Wednesday

My best friend Beth from Denver is back with another delicious vegetarian friendly dish. This is a great addition to the game night snack spread, or even for a quick appetizer before a dinner party. Some of our favorite Italian restaurants in St. Louis (where we grew up) offer fried zucchini sticks as an appetizer. While they are always tasty, this version is more appropriate for Healthy Snack Wednesday. Enjoy!

I love snacks! Especially when they are healthy and easy to make. I knew I would want something to snack on while watching the Broncos on Monday Night Football but didn't want to spend too long in the kitchen. So I sliced some zucchini and made some crisps. Sorry for the vague ingredients list, as I was being speedy, I didn't measure anything.



Zucchini Crisps
1 zucchini, cut into about 1/4 inch slices
Shredded parmesan cheese
Bread crumbs
Olive oil
Salt
Pepper
Marinara sauce

Preheat the oven to 450 degrees. Slice the zucchini and toss with olive oil in a bowl to coat evenly. Combine the shredded parmesan cheese, bread crumbs, salt and pepper to taste in a smaller bowl. Coat both sides of each zucchini slice before placing on a foil covered cookie sheet. Bake for 20-25 minutes until zucchini is tender. Serve with warm marinara sauce for dipping.

Beth From Denver: Vegetable Stock and Vegetable Chili

On Mondays at work, we take turns bringing soup for lunch. After receiving "How to Cook Everything Vegetarian" by Mark Bittman as a belated birthday gift, I was excited to really make soup from scratch for my turn this week. I started with making vegetable stock.



2 carrots, cut into chunks
1 onion, quartered
1 potato, cut into chunks
3 garlic cloves
1 bunch parsley
2 tablespoons extra virgin olive oil
salt and pepper

I was making soup for a large group of people, so I doubled the ingredients and combined them all with 12 cups of water in a pot. After bringing to a boil, I turned the heat down and let everything simmer for about 45 minutes. Then I strained the vegetables out (creativity necessary as I only have 1 pot that large) and put in a container to store in the refrigerator over night.



The next morning, I checked for all of my ingredients for the chili. Again, I doubled the recipe but since I only had large enough pots and pans for 1 batch at a time, I just repeated the steps. Here are the ingredients for a single batch.

1 zucchini, chopped
2 peppers, seeded and chopped (any color works, I used 1 red and 1 green)
2 portabella mushrooms, chopped
1 red onion, peeled and chopped
2 garlic cloves, chopped as finely as possible
2 jalapeno peppers, chopped as finely as possible
2 cups black beans, cooked
2 tablespoons chili powder
2 teaspoons paprika
3 tablespoons tomato paste
3 cups vegetable stock
extra virgin olive oil



Modeled after Lara, I chopped all my vegetables and took out all my other ingredients and measuring tools before I started cooking anything. I sauteed the zucchini, peppers, mushrooms and onion using the olive oil.





In a different pot, I heated up a couple of splashes of olive oil and cooked the garlic and jalapeno for 3-4 minutes.



When the vegetables were sauteed, (I let them cook about 7 minutes until they were a bit soft), I added them to the pot with the garlic and jalapeno. Then I added the beans and let them heat up. Then I added the chili powder, paprika and a dash of salt and pepper. Next I stirred in the tomato paste and let it cook for another 2 minutes. Finally I added the vegetable stock and let the soup simmer. If this hadn't been for school, I would have added a cup of beer and reduced it for about a minute before adding the vegetable stock. Like I said before, I made 2 batches and combined them in my crock pot. It is a bit spicy, but nothing that a handful of shredded cheese won't balance out! I'm excited to share it with my co-workers!

Guest Post: Renee's Thai Basil Fried Rice

This guest post is brought to you from Renee, my fellow foodie, co-worker, and sorority sister. Thankfully we have similar taste in food. That means a lot of lunchtime leftovers are shared in our office. When we're not bringing in our culinary creations, we can often be found at the local Thai restaurant. I often get a craving for the amazing Thai Basil Fried Rice from our favorite local take-out joint The Green Pea Pod in Watertown, MA. I am trying to curb these cravings as my new budget means cutting down on take-out. Luckily, one of my favorite ingredients to pick up from my weekly pilgrimage to Russo & Sons is the amazing Thai Basil. I use it in everything! So, improvising I went, and came up with a very simple Thai Basil Fried Rice of my own! It was a great substitute if I do say so myself!


Renee's Thai Basil Fried Rice
3/4 lb chicken breast tenders
1 teaspoon seasoning salt
2 large cloves of thinly sliced garlic (or 4 small cloves)
1 1/2 cup cooked brown rice
1 small red bell pepper, sliced into strips
1 small green bell pepper, sliced into strips
1 small vidalia onion, sliced
1/2 cup chopped Thai basil leaves
3 tablespoons soy sauce (or to taste)
Sriracha (Thai hot sauce)
Water
Olive Oil

In a large pan, heat oil and half of the garlic
Add chicken, sprinkle one side of chicken with seasoning salt
Brown chicken and remove from pan
Add remainder of garlic, when it starts to sizzle add onions
When onions become clear, add both types of peppers
Cook on medium-high heat for about 5 minutes or until peppers are your desired firmness
Reduce heat to medium
Add basil leaves and continue to brown for 2 minutes

Add soy sauce to veggies
Stir continuously until mixture JUST begins to boil
Add Sriracha to your desired heat (NOTE: It is VERY spicy. Know what you are getting into before you dump some in!)

Optional- Chop your cooked chicken into bite size pieces
Add the cooked chicken to the vegetable mixture
Simmer for 2 minutes
Add the cooked brown rice to the mixture
Let simmer, stirring frequently, for 5 minutes
If mixture starts sticking to the bottom of your pan, add 1/8 cup of water at a time

Serve with a cold beverage and enjoy!

Avi's Delicious Dinner Party

A good friend of ours recently hosted a dinner party - great company and great food! He went online to find some recipes and put together a stellar menu. When I asked him to confirm the date, he replied with the date and jokingly said, "So - you know how to cook, right? :)". I asked if he really did want my help and he assigned me some side dishes to go with his main courses.

A quick note, I've known Avi for about 9 years. Of the time I've known him, one year was college, 2 years he was away in grad school, and 5 years he was in Israel. This was really the first time I've had the opportunity to experience his cooking skills. Now that I have, we'll be suggesting dinner at his place more often.

Goat Cheese in Grape Leaves with Tomato and Olive Salad



Balsamic Blue Cheese Salad
Bread and butter

Sumac Skirt Steak with Pomegranate Reduction




Eggplant Parmesan



I went to the Natick Farmers Market in the morning to get ingredients for my contribution to the menu. I picked up some baby spinach and some fresh rigatoni from Fior D'Italia. My side dishes:

Sauteed Baby Spinach with garlic and pine nuts
Heat a tablespoon of olive oil in a large skillet over medium heat
Add garlic and cook for a few minutes, until garlic is fragrant (but not brown)
Reduce heat to low
Add 1 lb. of washed baby spinach leaves (you may need to add in batches)
Cook until spinach is just wilted
Toast pine nuts before serving and sprinkle on top

Fior D'Italia rigatoni with artichoke hearts and sun-dried tomato pesto
I cheated and used store bought ingredients to go with the pasta.

Cook pasta according to the package directions
Drain and return to the pot
Add about 1/4 cup of pesto, tossing well
Add 1 can of rinsed and roughly chopped and toss
Reheat before serving

For dessert I also cheated and used a Trader Joe's vanilla cake mix to whip up some chocolate chip cupcakes for dessert.

I asked Avi to tell me some interesting stories about cooking, and he thought that everything was pretty normal. He stopped by Christina's in Cambridge to pick up sumac for the steak, went to the grocery store to get his ingredients, and set the table before starting to cook.

A few other notes from Avi about the preparation:

If you want to cut down the expense of the dish (pomegranate juice and skirt steak are both pretty expensive), you can try to make it with pomegranate syrup. Pomegranate syrup is already reduced juice, but a lot cheaper and it will keep forever. Using it allows you to skip the whole reduction step. This will cut about 20 minutes from the preparation. It is hard to find, although Christina's had it in stock. You can also use sirloin or rib-eye steak instead of skirt-steak. If you're good, and have the steak already coated with the sumac, the grape leaves / goat cheese already dipped in oil (both can be done a day or two in advance), you can probably pull off both those dishes and the blue-cheese salad in less than 30 minutes of work.

When we arrived, he was hard at work in the kitchen finishing up the meal. The laptop was out on the counter and he was watching a video on how to properly layer the eggplant in the baking dishes. While we started on the salad course, he put the rest of the food in the oven to warm up for the main course.



Everything was absolutely delicious. The steak was cooked perfectly and I will be adding the pomegranate reduction to my favorite sauces list. It was tart, tangy, and just a little sweet. As an engineer, and probably without even thinking about it, Avi arranged everything symmetrically on the plate (or on matching plates).

I think we polished all the food, except for the giant dish of pasta I brought over. After dinner we tried out a new-to-us game called Pit (turns out it was first sold in 1904!) We traded commodities and laughed off a few of the calories from the cupcakes and icing.

It was a great evening and we're just waiting for the next invitation!
